Apricot, Lavender, Honeysuckle
Planadas, Tolima lies in the heart of Colombia's coffee-growing territories. It is an area extremely hard hit by decades of civil war, at the epicenter of the conflict that sacked the Colombian countryside. In the past decade, however, a coffee renaissance has taken hold, and producers like Norberto Olaya who himself is a leader of an organic coffee-growing association called ASOPEP, are leading by example with both their excellence in process and willingness to share their knowledge.
Olaya's La Selva is an organic Tabi varietal with an extremely floral profile in flavor, fragrance and aroma, with aromatic notes of apricot, lavender and honeysuckle that demonstrate both his technical skill as a farmer and the incredible quality of the soil in the region.
