Often referred to as the dream coffee cultivar, Sidra is a hybrid variety of a cross between the Borbón and Típica varieties. The result highlights the best characteristics of each, yielding a highly productive crop without sacrificing quality in cup. Producer Jonathan Delgado brings out the very best of this special variety through a double fermentation process, intensifying its fruitiness and increasing its complexity. Jonathan is also the head of coffee processing at his family’s farm El Diviso, where his parents and siblings shifted focus from producing quantity to quality, now predominantly only producing microlots of exclusive and exotic specialty coffees. 

El Diviso Sidra is a complex coffee bursting with tropical fruit notes like lychee and pineapple, and pronounced floral notes of lavender and rose apple, with citric undertones reminiscent of orange marmalade.
