Our latest release from Finca El Paraíso showcases the farm’s highly advanced and innovative approach to coffee processing and its commitment to pushing flavor boundaries. For this lot, ripe coffee cherries undergo a carefully controlled two-stage fermentation process using a custom culture medium derived from tropical fruit microorganisms. The coffee is then washed using a thermal shock technique, with hot water to open the beans' pores, followed by a cold rinse to lock in flavor. Finally, it is gently dried in a dehumidifier to preserve its full aromatic expression.
El Paraíso Lychee is bright and tropical, with expressive notes of lychee, starfruit, green apple acidity, a creamy body, and floral honey sweetness.
